Parsley is a fresh, mildly bitter herb derived from the Petroselinum crispum plant, which is endemic to Mediterranean regions. The ancient Greeks and Romans flavoured and garnished food using parsley leaves. 
It is used as a garnish and in cooking to provide a fresh, herbal flavour to foods. The pleasantly aromatic flavour of the leaves goes well with fish, meats, soups, sauces, and salads. They can be used fresh or dried.
