Dry red chilies are sun-dried, ripe chilies that are used extensively in Asian and Indian cooking to enhance flavour and colour. It can be used whole in a variety of dishes, or processed into a powder. It is said that chillies are native to South America and can be found widely throughout all tropical and subtropical regions, including India. Around the end of the 15th century, the Portuguese brought it to India for the first time. Nowadays, with the exception of colder climates, it is grown everywhere.
